
Tuna, Potato & Green Bean Salad Nicoise
Ingredients
- 2 cups diced red potatoes
- 1/2 cup Greek olives, pitted
- 3 tablespoons olive oil
- 1 1/2 teaspoon apple cider vinegar
- 1 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 head lettuce
- 4 oz. water packed tuna, drained
- 1 cup diagonally cut green beans (blanched)
- 1 cup sliced red bell pepper
- Extra strips of red pepper & greek olives for garnish
Instructions
- In large pot steam potatoes until tender. Place olives, olive oil, apple cider vinegar, salt & pepper in a blender & puree. Pour over potatoes & let marinate 40 minutes.
- Wash and dry lettuce and arrange on platter. Toss tuna, beans & bell pepper with potatoes & marinade, then spread on lettuce. Serve at room temperature.
