
Succotash (non-traditional)
Ingredients
- 2 tablespoons olive oil
- 3 slices slab bacon, cubed
- 6 minced scallions
- 3 minced garlic cloves
- 1 stalk celery (1/4" cubes)
- 2 tablespoons paprika
- 1 red & 1 yellow bell peppers
- 6 ears corn
- 1 10-oz package frozen lima beans
- 1/4 cup heavy cream
Instructions
- Heat olive oil over medium-low heat. Slowly cook bacon until crisp. Remove and set aside.
- Slowly saute in bacon fat out - 2/3 scallions, garlic, celery & paprika.
- Char peppers on gas burner, cut up and at to skillet.
- Cut corn and add to skillet. Cook two minutes.
- Add frozen limas. Cook 5-8 minutes. Stir in cream. Add salt, pepper & remaining scallions.
