
Snow Pea Salad with Walnut Vinaigrette
Ingredients
- 1 lb. fresh snow peas, strings removed
- 1 1/2 tablespoons fresh lime juice
- 2 teaspoons low-salt tamari or soy sauce
- 1/3 cups walnut oil
- 3 think scallions, thinly sliced on the diagonal
- 2 teaspoons minced fresh ginger root
Instructions
- In large pot of boiling water, blanch snow peas until bright green and beginning to puff, 45 to 60 seconds. Drain & rinse under cold water. Drain well and dry.
- In small bowl, whisk lime juice and soy sauce until blended. Which in walnut oil. Stir in scallions and ginger. Pour the vinaigrette over the snow peas and toss until well coated.
