A family favorite for the holidays! Great for a big family meal, can be prepped in advance, and the best leftover dish you could dream of!

Pine Nut Casserole

Ingredients
- 2 cups pearl barley
- 1 box Uncle Ben's Long Grain & Wild Rice
- 1/2 to 1 cup pine nuts
- 1/2 lb butter
- 1 chopped onion
- Fresh mushrooms
- Parsley
- Chives
- 3 cans beef broth
- 2 cans beef consumme
- 2 cans water
Instructions
- Melt one stick butter in large frying pan. Brown barley and wild rice. Add pine nuts, parsley and chives.
- In separate pan, saute mushrooms and onion in remaining butter.
- Put contents of both fry pans in large casserole. Add all liquid and wild rice seasoning packet. (Can be stored at this point up to 24 hours)
- Bake uncovered at 350 for 90 minutes, until liquid has evaporated and casserole is fluffy.
