
Grandma Florence’s Lebkuchen

Ingredients
- 1/2 cup honey
- 1/2 cup molasses
- 3/4 cup brown sugar, packed
- 1 egg
- 1 tablespoons lemon juice
- 2 3/4 cup sifted flour
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon cloves
- 1 teaspoon allspice
- 1 teaspoon nutmeg
- 1/3 cut up citron
- 1/3 cup chopped nuts
- 1 cup sugar
- 1/2 cup water
- 1/4 cup powdered sugar
Instructions
- Mix honey and molasses. Bring to boil. Stir in brown sugar, eggs, lemon juice and rind.
- Sift dry ingredients together. Blend in. Mix in citron and nuts. Chill overnight.
- Race small amount of dough at a time, keep the rest chilled. Roll out 1/4 inch thick on lightly floured board.
- Cut in oblongs 2 1/2" and 1 1/2". Place 1" apart on greased baking sheet.
- Make icing: blend sugar and water in small saucepan. Boil until first indication of thead (?) appears (230 degrees on candy thermometer). Remove from heat. Stir in powdered sugar.
- Bake in preheated 400-degree oven 10-12 minutes or until no imprint remains when touched lightly. Brush icing over cookies immediately. If icing becomes sugary while brushing cookie, reheat slightly, adding a little water until clear again. Quickly remove from baking sheet. Cool.
- Store in airtight container with a cut apple or orange for a few days to mellow.
