
Egg Cheese
Ingredients
- 2 cups milk
- 6-7 eggs
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/3 cup sugar
- 1/2 teaspoon vanilla
- (raisins if desired)
Instructions
- In a large saucepan, heat ingredients until well mixed, couple of minutes. (Add raisins now if desired).
- Stirring constantly, heat over lot to medium hear until curdles to the consistency of yogurt. (Will take 45-60 minutes. Must cook slowly so as not to stick.)
- Then cook over low heat for approximately 10-15 minutes. Stirring occasionally. The curdles will become firmer in this time.
- Dump into a linen towel (cheesecloth will work, too) and hand to drain for almost 2 hours.
- Refridgerate.
