
Chicken with Capers
Ingredients
- 1/3 cup olive oil
- 4 skinned boneless chicken breasts
- 1 packet instant seasoned chicken broth
- 1/3 lb. sliced mushrooms
- 3 tablespoons capers
- 1/2 cup white wine
Instructions
- Sprinkle chicken with broth. Heat olive oil in frying pan. Saute chicken on both sides until golden brown. Remove to warmed serving platter.
- In same pan, saute mushroms 30-40 seconds. Remove and place on top of chicken.
- Add wine, boil about to minutes to reduce liquid, and add capers just to heat. Pour over chicken.
