Warning: this dish is known to be extremely delicious! These yummy meatballs have rice sticking out to resemble a prickly porcupine. A most wonderful leftover and comfort food, we have yet to meet anyone who does not adore the porcupines.

It is easy to increase or decrease the portion size of this dish, so make it for family gatherings, snow days, neighbors, friends recovering from surgery (best knee surgery care package ever!), or just your own dinner.

The recipe below is technically a half batch. Increase or decrease accordingly.

Ingredients

  • 1 lb. ground beef
  • 1/2 cup raw converted rice
  • 1/4 cup chopped onion
  • 1 tsp salt
  • 1/4 tsp pepper
  • 2 + Tbsp cooking oil
  • 2 (8 oz.) cans tomato sauce
  • 1 cup water

Instructions

  1. Mix beef, rice, onions & seasonings. Form into small balls.
  2. Fry in oil, turning frequently, until light brown but not crusty on all sides.
  3. Add tomato sauce & water, mix well.
  4. Cover & simmer 45 mins.
