There’s a certain brand of chili sold only in the Cincinnati area called Skyline Chili that many people are crazy about. You can buy it in cans in area grocery stores, and there is a popular food stand in the Cincinnati Airport. It’s sweet and spicy and very unique. I’m not sure how close this recipe is to the original, since it’s been YEARS since I had a bonafide can of the stuff … but this is close and everyone loves it. So cook up a batch and try something new.

Aunt Dee Dee’s Cincinnati Chili

Ingredients
- 1 lb. ground beef (85% / 15%)
- 1 Tbsp. canola oil
- 1 large onion, minced
- Salt
- 2 garlic cloved, minced
- 1 Tbsp. chili powder
- 1-1/2 tsp. cocoa powder
- 1 tsp. cinnamon
- 1/4 tsp. cayenne pepper
- 1/4 tsp. ground allspice
- 3 cups chicken broth
- 2 Tbsp. cider vinegar
- 2 tsp. brown sugar
- 1 (15 oz.) can tomato sauce
- 1 cup water
- 1/2 lb. spaghetti, broken in half
- Salt & pepper to taste
- Accompaniment/Topping (optional): chopped onions
- Accompaniment/Topping (optional): shredded cheddar cheese
- Accompaniment/Topping (optional): Tabasco sauce

Instructions
- In a skillet, brown meat. Remove browned meat from pan, leaving some drippings, and set aside in large lidded chili pot. (If you are doubling the recipe, this should be a large pot.)
- Add oil to skillet, heat oil, and cook onion until soft, approx. 5 minutes.
- Stir in garlic and spices and salt, and cook 2-3 minutes until fragrant.
- Stir in chicken broth until smooth, and pour entire skillet of ingredients into the cooking pot with the ground beef.
- Stir in vinegar, brown sugar, tomato sauce and water.
- Bring cooking pot to a boil, reduce heat and simmer 1 hour.
- Stir in uncooked spaghetti, cover and simmer at a low boil for 20 minutes.
- Salt and pepper to taste before serving.
