Olive’s Apple Fritters

When Dottie, Phyllis and DeeDee were girls, the big Sunday meal was served at noon.  So Sunday supper was typically either there Apple Fritters or popcorn.  Sometimes fried cakes, or doughnuts.

So much for how much better and more nutritious food people used to eat in the past!

Ingredients

  • 1-1/2 cups flour
  • 1-1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 egg
  • 1/3 cup sugar
  • 3 or 4 Jonathan apples, cored, pared and chopped
  • 1 Tablespoon lemon juice, add to apple to keep from browning
  • Vegetable oil

Instructions

  1. Beat together with mixer eggs and sugar. Add milk. Mix well.
  2. Add dry ingredients. Stir well. Stir in chopped apples.
  3. Drop by spoonful into hot cooking oil (350 to 375 degrees). They will bob up. Flip them over. When they are brown on both sides, remove dish lined with paper towel to remove excess oil. Test one to make sure the batter is cooked all the way through. Bigger fritters will take longer to look.
  4. Dust with confectioner's sugar and eat while they are still warm.
