Abbie’s Chili Relleno Casserole

Ingredients
- 1 lb. (16 oz.) sharp cheddar cheese, shredded
- 1 lb. (16 oz.) Monterey Jack cheese, shredded (or similar cheese blend)
- 3 to 4 (7 oz.) cans whole mild green chilis, sliced in two
- 4 eggs
- 2 cups milk or half-and-half
- 1 cup flour

Instructions
- Grease a 9" x 12" baking dish with butter or spray
- Layer cheese & chilis in the following order: one-third of cheese; 2 cans chilis; one-third cheese; 2 cans chilis; remaining cheese.
- Beat together eggs, flour and milk using a mixer, and pour evenly over top.
- Bake at 325 degrees until set, about 45 minutes. Let set for 10 minutes before cutting.
- Serves 10. Add 1 to 2 more eggs to increase yield.
