






Ridiculously Delicious and Easy Halibut with Jalapeno Butter

Ingredients
- 4 - 8 oz. halibut fillets, deskinned, rinsed and patted dry (or any whitefish like cod or flounder)
- 1 Tablespoon canola oil
- 6 Tablespoons butter
- 2 fresh jalapeno peppers, stemmed, seeded and cut into thin strips (also works with Anaheim or serrano peppers)
- 1/4 cup snipped fresh basil leaves
- 1 lime, cut into quarters
Instructions
- Brush fish with oil. Sprinkle with salt and pepper.
- On gas or charcoal grill, grill filets on greased aluminum foil, over medium heat for 4 to 6 minutes per 1/2-inch thickness, or until fish flakes very easily with fork. Turn once.
- Meanwhile, in a large skillet, heat butter over medium heat. Add jalapeno; cook and stir 5 minutes or until tender and just beginning to brown.
- To serve, top fish with basil and jalapeno butter. Squeeze with lime.
