
Mary Horvath’s Tortellini Salad

Ingredients
- 4 oz. feta cheese, cut into 1/2-inch cubes
- 5 oz. package of frozen cheese tortellini, cooked & chilled (about 1-1/2 cups)
- 1/2 cup pitted black olives, halved
- 1 tomato, diced
- 1/4 cup chopped parsley
- 3 Tablespoons chopped fresh basil, or 2 teaspoons dried
- 1/3 cup olive oil
- 1/8 teaspoon pepper
- dash nutmeg

Instructions
- In large serving bowl, combine cheese, tortellini and olives. Set aside.
- Make dressing: in food processor or equivalent, combine parsley, basil, olive oil, pepper and nutmeg. Add to tortellini and toss.
- Serve chilled or at room temperature.
- Add tomato just before serving to avoid getting mushy.
