The Cheesecake

This really should be named “The Very Best Cheesecake in the Whole Wide World.”

It is a signature family specialty.  Sometimes are get invited places entirely provided that we will bring cheesecake.  It’s okay.  If you make the best cheesecake anyone has ever tasted, stuff like that is going to happen.

Ingredients

  • 20 graham cracker squares (about 1-3/4 cups), crumbled/broken into tiny pieces
  • 1 Tablespoon sugar
  • 1/4 cup melted butter
  • 3 (8 oz.) packages Philadelphia cream cheese, softened
  • 1 cup sugar
  • 5 large eggs
  • 1 pint sour cream
  • 4 Tablespoons sugar
  • 1 teaspoon vanilla

Instructions

  1. First, make graham cracker crust. Mix graham cracker, 1 Tablespoon sugar and 1/4 cup melted butter in bowl. Pat into the bottom of a greased 9" x 13" baking pan.
  2. To make filling: Combine cream cheese, 1 cup sugar and 5 large eggs. Beat with mixer until fluffy. Pour into pan and bake 40 minutes at 325 degrees. Check center with toothpick. Cool completely.
  3. To make sour scream top: Mix sour cream, 4 Tablespoons sugar and vanilla with in bowl with spoon. Spread over cooled cake. Bake for 5 minutes at 475 degrees. Cool completely.
  4. Chill cheesecake covered in fridge. Cut into squares when ready to serve.
  5. Robin's contribution is homemade Raspberry Sauce on top. Try it!
