
Baked Goat Cheese Salad

Ingredients
- Four 2 1/2 inch round of goat cheese, each about 1/2 inch thick
- 3/4 cup extra virgin olive oil
- 3 fresh thyme sprigs plus 1 teaspoon dried thyme
- 1 cup fine dried breadcrumbs
- 2-3 tablespoons red wine vinegar
- salt & fresh ground pepper to taste
- 8 cups lightly packed lettuce leaves
- Garlic Croutons (recipe in steps)
Instructions
- Drizzle 1/4 cup olive oil in goat cheese in a shallow dish. Turn to coat completely. Sprinkle with fresh thyme. Cover & refrigerate overnight.
- Goat cheese with bread crumbs & dried thyme mixture. Bake at 400 degrees 10-12 minutes until golden brown & bubbly on a lightly greased baking sheet.
- Meanwhile to make dressing slowly add 1/2 cup olive oil to 2 tablespoons vinegar. Salt & pepper to taste. Add vinegar if necessary.
- Toss vinegarette with lettuce and make mounds on individual plates. Invert the goat cheese rounds into the center. Place the croutons around the cheese.
- Garlic Croutons: 24 slices (1/4 inch thick) of day-old baguette 4 tablespoons unsalted butter, melted 2 medium garlic cloves, peeled & halved Preheat oven to 350 degrees. Brush both sides of bread with melted butter and place in a single layer on a baking sheet. Bake for 15 minutes until golden. Rub the croutons with the cut garlic cloves while still warm.
