Aunt Sue’s Raviolis

Ingredients
- 2 or 3 chopped onions
- 2 lbs. of lean ground meat
- salt, pepper, garlic powder, oregano and ground fresh parsley about 1/4 Cup
- 1 box of cooked frozen chopped spinach
- 1/3 cup of Italian breadcrumbs
- 9 to 10 eggs
- 1/4 cup of Italian cheese
- 3 1/3 Cups flour
- 1/4 Cup + 1 Tablespoon of water
- 2 1/2 teaspoons of salt
- 1 Tablespoon + 2 teaspoons of oil
Instructions
- Sauté 2 or 3 chopped onions and add 2 lbs. of lean ground meat. Add salt, pepper, garlic powder, oregano and ground fresh parsley about 1/4 Cup. Cook until browned. Try to remove as much grease as possible.
- Next add 1 box of cooked frozen chopped spinach. Make sure you squeeze out all the water you can. (I use paper towels to do this). Add about 1/3 cup of Italian breadcrumbs.
- Turn off the heat and add about 4 or 5 eggs and about 1/4 cup of Italian cheese. Mix well and adjust the seasonings to taste.
- Combine flour, 5 eggs, water, salt and oil for dough. Roll out through kitchen aide mixer attachement.
- NoteL You can also boil large pasta shells, fill them with the meat mixture, cover with pasta sauce and warm them in the oven. Of course they are much better if you make the ravioli and freeze them on a lightly floured cookie sheet.
- Then you just have to throw them in boiling water, cook for about 5 or ten minutes, drain and cover with sauce and voila!!
